Pumpkin Protein Muffins

Ingredients

  • 2 cups Oats

  • 2 scoops vanilla protein powder

  • 2 cup (15oz can) Pumpkin Puree

  • 1 cup milk

  • 2 whole eggs

  • ¼ cup maple syrup

  • 1 tsp baking powder

  • ½ tsp vanilla extract

  • ½ tsp cinnamon

  • ½ cup cacao nibs

  • ¼ cup chia seeds

Preparation

  1. Preheat oven to 350 degrees f

  2. In a food processor blend oats

  3. In a large bowl combine all ingredients well

  4. Scoop batter into muffin tins or liners

  5. Bake for ~15 minutes until centers are just set

Tips

  • Any milk or nondairy beverage can be used

  • To sub 2 eggs 

    • ½  cup unsweetened applesauce

    • 2 Tbs ground flaxseed + 6 Tbs water

    • ½  cup mashed banana

    • ½ cup vegetable oil

Ready in 20 minutes
