Ingredients

2 cups Oats

2 scoops vanilla protein powder

2 cup (15oz can) Pumpkin Puree

1 cup milk
-
2 whole eggs

¼ cup maple syrup

1 tsp baking powder

½ tsp vanilla extract
-
½ tsp cinnamon
-
½ cup cacao nibs
-
¼ cup chia seeds
Preparation

Preheat oven to 350 degrees f

In a food processor blend oats

In a large bowl combine all ingredients well

Scoop batter into muffin tins or liners
-
Bake for ~15 minutes until centers are just set

Any milk or nondairy beverage can be used

To sub 2 eggs

½ cup unsweetened applesauce

2 Tbs ground flaxseed + 6 Tbs water

½ cup mashed banana
-
½ cup vegetable oil
-
Ready in 20 minutes
